Easy Black Bean Chili

Ingredients:
Vegetable oil
1 Whole Onion
1/2 Green Pepper
1 tbsp. minced garlic
1 tbsp. tomato paste
Salt
Ground Pepper
1 tsp. chili powder
1/2 tsp. cumin
2 whole cans of black beans, with liquid
Sour cream, for garnish
Mexican cheese, for garnish
Sliced avocado, for garnish
Chopped fresh cilantro, for garnish
Instructions:
- In a large pot add onion and oil, cook for about 5 minutes until translucent. Add green peppers or other preferred vegetable
- Add minced garlic, Cumin, Chili powder, Salt and Pepper. Stir pot.
- Next, Add tomato paste to coat vegetables in pot
- Add black beans with liquid, Stir and let simmer for about 15 minutes
- Serve with your preferred garnishes ( Mexican Cheese, Sour Cream, Avocado, Cilantro)
